Excellent with shellfish and fish in general, it also pairs well with medium-aged cheeses.
Manually harvesting and hand-picking took place at the end of September. This was followed by a short maceration in the press, with malolactic fermentation in stainless steel tanks at a controlled temperature. Once fermentation was complete, the wine remained on its lees with frequent batonnage.
